He had been slashed from his ear to his nose.
Prosecutor Louise Beattie said the man needed surgery and has been left scarred for life.
The second victim also suffered wounds to his forehead.
Foy, of Dundee, was later held for the attacks.
The hearing was told his DNA was found on a door handle at the scene.
No weapon was discovered, but it is thought a large “flick-type” blade was used.
Foy pled guilty to two charges of aggravated assault.
Allegations that the victims were also robbed were deleted from the indictment.
It emerged Foy already a lengthy criminal past including for violence, disorder, weapons and drugs.
Judge Louise Arrol KC continued his remand in custody as sentencing was deferred until next month.
She told Foy: “This is an extremely serious matter, particularly the attack on [the first man].
